Salut à tous !

Après vingt ans de boulange en salariat, de nombreuses expériences à travers l’Europe, dans toutes sortes de boulangeries, auprès de Meilleurs Ouvriers de France et dans de belles maisons comme Les Maîtres de mon Moulin, à Cucugnan, j’ai enfin franchi le pas : je travaille à mon compte.

Ça fait déjà deux ans. J’ai commencé avec un four à bois microscopique, et les débuts ont été très durs. Il y a six mois, j’ai investi toutes mes économies dans un four à bois phénoménal : un fournil mobile de l’armée suisse !

Un véritable atelier sur roues, avec un immense four à bois, qui me permet de produire de grandes quantités de pain. Toujours au levain, avec de longues fermentations et beaucoup, beaucoup d’amour.

J’ai le four. Maintenant, il me faut un lieu !

Je cherche un endroit où installer durablement mon fournil et continuer à faire mon pain en Ariège. J’ai de très bonnes pistes, mais l’achat du lieu et l’installation représentent un gros effort financier.

Ma famille et mes amis m’ont déjà proposé leur soutien, notamment par des promesses de prêts. Pour compléter ce financement, je fais aujourd’hui appel à vous.

Les dons de cette cagnotte contribueront à l’achat d’un lieu adapté et à l’installation du fournil : transport, raccordements, réparations et aménagements nécessaires.

Un lieu est actuellement à l’étude, mais son achat n’est pas encore assuré. Si cette piste n’aboutit pas, les fonds resteront destinés au même projet, dans un autre lieu adapté.

Hi everyone!

After twenty years working as a baker, gaining experience across Europe in all kinds of bakeries, alongside Meilleurs Ouvriers de France (award-winning French master craftspeople) and at wonderful places such as Les Maîtres de mon Moulin in Cucugnan, I finally took the plunge and started working for myself.

That was two years ago already. I started with a tiny wood-fired oven, and those early days were really tough. Six months ago, I invested all my savings in something extraordinary: a former Swiss Army mobile bakery!

A complete bakery on wheels, with a huge wood-fired oven that allows me to bake large quantities of bread. Always sourdough, with long fermentation times and lots and lots of love.

I have the oven. Now I need a place for it!

I’m looking for a permanent home for my bakery so I can keep making bread here in Ariège, in the foothills of the French Pyrenees. I have some very promising leads, but buying a place and setting everything up is a big financial challenge.

My family and friends have already offered their support, including pledges of loans. To help complete the funding, I’m now reaching out to you.

Donations to this fundraiser will help buy a suitable property and get the bakery set up: transport, utility connections, repairs and the necessary improvements.

I’m currently considering one property, but the purchase is not yet guaranteed. If it doesn’t work out, the funds will still go towards the same bakery project at another suitable location.
